How To Prepare The Famous Plantain And Egg Frittata

Ladies! It’s time to change the mood at home. You all know how food turns everything around now. Are you tired preparing the old same traditional dishes? Let me help you get your kitchen bubbling once more and your family licking at their plates. This meal is one of the simplest to prepare and it takes no time at all. Perfect breakfast meal. You do not even have to wake so early just to prepare something delicious for everyone. It is famously known as “Plantain Pizza” because of it’s shape and appearance. But of course, it is called “Plantain and Egg Frittata”.

Are you ready? Well, here is how you prepare it;

Ingredients:

2-3 large sized ripe plantain{depending on how plenty you want}
4 small sized sausages, cut into round shape
5 eggs, whisked
3 medium tomatoes, diced
2 red bell peppers, cut into strips
2 green bell peppers, cut into long strips
1 medium onion, chopped
3 cloves of garlic, crushed
1 stock cube
teaspoon curry powder
teaspoon thyme
Olive oil for frying
A sprinkle of cayenne pepper

Recipe;

Peel and dice plantain into your desired shape and size, sprinkle it with a pinch of salt and fry until they are golden, then drain and set aside.

Place an empty pan on a stove, add about 2 tablespoons of cooking oil to it, add onions and garlic and saut for 1 minute.(did you hear the sizzle?)

Add sausage and stir fry for few minutes, then add the bell peppers.
Season with curry, thyme, dry pepper, 1 stock cube and a pinch of salt to taste.

 

Beat eggs in another bowl and pour the content in the frying pan into the egg.
Place an empty pan on the stove and coat the inside of the pan with olive oil.
Pour the egg mixture or the filling into the coated pan and level it.

Begin to arrange the fried plantain round the pan until it takes the shape of the pan.
Add few bell pepper strips for colour, then cover the lid and cook on low heat for 20 minutes until it begins to set and cake nicely.

Take it off heat!
