How to Prepare Yummy Prawn Couscous Jollof in Less Than 2 Minutes

Couscous is a  Middle Eastern dish of small steamed balls of crushed durum wheat semolina that is traditionally served with a stew spooned on top.

Jollof, on the other hand, is a staple meal among Nigerians and we always love to try out different food recipes so as not to fall in a rut.

The couscous in this recipe replaces the rice for the jollof but this doesn’t affect the taste and yummy flavor of the meal.

INGREDIENTS

  • 2 cups couscous
  • 100g prawns, deveined
  • 5 medium tomatoes
  • 1tbsp Cayenne pepper powder
  • small Onion, slices
  • 4 cloves of garlic, minced.
  • 1 tsp thyme
  • 1 tsp nutmeg
  • 3 tbsp vegetable oil
  • Salt.

DIRECTIONS

  • Heat vegetable oil in a saucepan over medium heat.
  • Add thyme, onion, garlic, stir and let sweat for a minute.
  • Add chopped tomatoes, stir and let simmer down then add cayenne pepper powder, nutmeg, and salt.
  • Add prawns, stir and let simmer for a minute then add 100ml water, cover and let boil for 2 minutes
  • Take out the prawns, set aside then add the couscous, stir, cover and reduce heat to low.
  • Allow to cook for 3 minutes, add back the prawns, stir –in and let cook for 2 minutes.
  • Prawns couscous jollof is ready.
  • Serve with sautéed Brussels sprout.
