Couscous is a Middle Eastern dish of small steamed balls of crushed durum wheat semolina that is traditionally served with a stew spooned on top.
Jollof, on the other hand, is a staple meal among Nigerians and we always love to try out different food recipes so as not to fall in a rut.
The couscous in this recipe replaces the rice for the jollof but this doesn’t affect the taste and yummy flavor of the meal.

- 2 cups couscous
- 100g prawns, deveined
- 5 medium tomatoes
- 1tbsp Cayenne pepper powder
- small Onion, slices
- 4 cloves of garlic, minced.
- 1 tsp thyme
- 1 tsp nutmeg
- 3 tbsp vegetable oil
- Heat vegetable oil in a saucepan over medium heat.
- Add thyme, onion, garlic, stir and let sweat for a minute.
- Add chopped tomatoes, stir and let simmer down then add cayenne pepper powder, nutmeg, and salt.
- Add prawns, stir and let simmer for a minute then add 100ml water, cover and let boil for 2 minutes
- Take out the prawns, set aside then add the couscous, stir, cover and reduce heat to low.
- Allow to cook for 3 minutes, add back the prawns, stir –in and let cook for 2 minutes.
- Prawns couscous jollof is ready.
- Serve with sautéed Brussels sprout.
